Rava Dhokla

Materials

For making Dhokla batter

  • 1 cup Rava/ Semolina/ Sooji
  • ½ cup Thick yoghurt dahi
  • ½ tsp Sugar optional
  • Salt to taste
  • 1 tsp Ginger grated
  • 1 Green chilli deseeded and finely chopped
  • 1 tsp Eno fruit salt
  • Water as required
  • 1 tbsp Tempered oil with mustard seeds

For tempering Rava Dhokla

  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 Green chilli finely chopped
  • Few curry leaves
  • Pinch of asafoetida
  • 2 tbsp Fresh coriander leaves finely chopped

Instructions

For making semolina yoghurt batter:

  • In a large mixing bowl, add yoghurt and 2 tbsp of water and whisk it nicely to avoid any lumps.
  • Add more water if needed to make the yoghurt in pouring consistency.
  • Add rava into the whisked yoghurt and mix it nicely.
  • Adjust the water if the mixture is dry.
  • Add salt, sugar (optional, I do not use sugar), grated ginger, green chilli and mix it nicely.
  • Now, cover the batter and keep aside for 14 to 15 mins.
  • After 15mins, add Eno fruit salt and mix it immediately and transfer the batter to the greased pan or plate.
  • Steam the prepared mixture for about 12 minutes on medium-high flame.
  • Now, remove the dhokla and cut into 1-inch pieces. 

For Tempering Rava Dhokla:

  • In a small tadka pan, heat 2 tbsp oil.
  • Further, add mustard seeds and hing.
  • When the mustard seeds crackle, add in the chopped green chillies.
  • Saute for few seconds and add chopped coriander leaves.
  • Spread the tempering all over the steamed mixture.
  • Rava Dhokla is ready to be served hot or warm with green chutney or sauce.
