Dhokla Recipe | Instant Sooji Dhokla | How to make Instant Rava Dhokla

Dhokla recipe is an instant and quick breakfast recipe yet very fluffy and delicious in taste. This recipe doesn’t need any grinding or fermentation process. This soft and spongy dhokla recipe is made with whipped yoghurt or buttermilk. Rava is ‘Semolina‘ in English.

 

Instant rava dhokla can be made using either yoghurt or lemon juice with water. Today, in this recipe I am adding Eno fruit salt which gives more fluffiness to the batter. And it does not taste weird as it does on using baking soda. It is typically served in breakfast in Gujarati cuisine but can also be had in lunch and dinner.

Traditionally, khaman recipe is prepared from besan or chickpea flour which has to be fermented batter, whereas this rava dhokla recipe is instant recipe and fermentation process is not required. Making this recipe is much healthier and tastier than the khaman, and easy to digest. Whereas, khaman is heavy on the stomach and makes uneasy to digest.

 

Some important points to consider while making rava dhokla. First, mix the yoghurt and rava (semolina) and keep the batter aside for 15 to 20 mins. Then, just before steaming the batter, add Eno fruit salt which gives a nice aroma and adds fluffiness to dhoklas. Second, do not use turmeric powder and baking soda combination it will result in red colour and spoil the dish. Lastly, add the tempering on the top of the steamed batter which is an ultimate stroke to get taste and aroma.

Rava Dhokla

Materials

For making Dhokla batter

  • 1 cup Rava/ Semolina/ Sooji
  • ½ cup Thick yoghurt dahi
  • ½ tsp Sugar optional
  • Salt to taste
  • 1 tsp Ginger grated
  • 1 Green chilli deseeded and finely chopped
  • 1 tsp Eno fruit salt
  • Water as required
  • 1 tbsp Tempered oil with mustard seeds

For tempering Rava Dhokla

  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 Green chilli finely chopped
  • Few curry leaves
  • Pinch of asafoetida
  • 2 tbsp Fresh coriander leaves finely chopped

Instructions

For making semolina yoghurt batter:

  • In a large mixing bowl, add yoghurt and 2 tbsp of water and whisk it nicely to avoid any lumps.
  • Add more water if needed to make the yoghurt in pouring consistency.
  • Add rava into the whisked yoghurt and mix it nicely.
  • Adjust the water if the mixture is dry.
  • Add salt, sugar (optional, I do not use sugar), grated ginger, green chilli and mix it nicely.
  • Now, cover the batter and keep aside for 14 to 15 mins.
  • After 15mins, add Eno fruit salt and mix it immediately and transfer the batter to the greased pan or plate.
  • Steam the prepared mixture for about 12 minutes on medium-high flame.
  • Now, remove the dhokla and cut into 1-inch pieces. 

For Tempering Rava Dhokla:

  • In a small tadka pan, heat 2 tbsp oil.
  • Further, add mustard seeds and hing.
  • When the mustard seeds crackle, add in the chopped green chillies.
  • Saute for few seconds and add chopped coriander leaves.
  • Spread the tempering all over the steamed mixture.
  • Rava Dhokla is ready to be served hot or warm with green chutney or sauce.

 

Step by step Instructions:

 

For making Semolina yoghurt batter:

 

  1. In a large mixing bowl, add yoghurt or dahi and 2 tbsp of water.dhokla - dahi 
  2. Whisk it nicely to avoid any lumps. dhokla - whisk dahi
  3. Add rava into the whisked yoghurt and mix it nicely.dhokla - add rava
  4. Add salt, sugar (optional, I do not use sugar), grated ginger, and green chilli.dhokla - add chillies, ginger, salt
  5. Mix all the ingredients nicely with whisk yoghurt.dhokla - mix
  6. Add water to make the pouring consistency of the batter.dhokla - add waterdhokla - add rava water
  7. Now, cover the batter and keep aside for 14 to 15 mins. dhokla - Cover with lid
  8. After 15mins, add Eno fruit salt.dhokla - add ENO
  9. Mix it immediately and transfer the batter to the greased pan or plate.dhokla - transfer to pan
  10. Steam the prepared mixture for about 12 minutes on medium-high flame.dhokla - steam
  11. After 15 mins, remove the steamed batter from the steamer and let it cool down. dhokla - steamed dhokla

 

For Tempering steamed Rava-Dhokla:

 

  1. In a small tadka pan, heat 2 tbsp oil.dhokla - oil
  2. Further, add mustard seeds and sesame seeds along with hing.dhokla - add mustard seeds
  3. When the mustard seeds crackle, add in the chopped green chillies.dhokla - add Chillies
  4. Saute for few seconds and add chopped coriander leaves.dhokla - add coriander leaves
  5. Spread the tempering all over the dhokla and cut it into the desired shape and serve hot with chutney or sauce.dhokla - spread
  6. Rava Dhokla is ready to be served hot or warm with green chutney or sauce.instant rava dhokla

 

Important tips for making fluffy rava dhokla:

 

  1. Make use of sour yoghurt to get great taste and aroma.
  2. You can add turmeric powder to get the yellow colour just like khaman dhokla.
  3. Using Eno fruit salt gives more fluffiness to the dhokla. Moreover, Eno fruit salt is healthier than baking soda. 
  4. Make a  spicy tempering as it adds to the taste of Rava dhokla.
