Chocolate Ganache recipe

- ½ cup Cocoa powder use good quality cocoa powder
- ½ cup Granulated sugar
- 2 tbsp Corn starch
- Pinch of salt
- 1 cup Milk
- 1 tbsp Unsalted butter if using salted butter, then skip adding salt
- 1 tsp Vanilla essence
In a saucepan, add all the dry ingredients - ½ cup cocoa powder, ½ cup fine granulated sugar, 2 tbsp corn starch and a pinch of salt. Mix all the ingredients together with whisk or spatula, make sure there are no lumps in cocoa powder and corn starch. Once everything is mixed well, add milk gradually. Give it a nice mix. Mix and mash with a spatula to break any lumps. When everything is mixed well, add the remaining milk and give it a nice mix. Place the saucepan on the heat and keep stirring it on low flame. After 7 to 8 minutes, the consistency of the ganache will start to thicken. Cook for couple more minutes and turn off the flame. Lastly, add a tbsp of butter and a tsp of vanilla essence in the saucepan. Give it a nice mix until butter blends with the ganache. At this moment, the ganache will be runny. But, once it cools down, it will become thick, kind of spreadable consistency. Transfer the chocolate ganache in a bowl. And use as needed. It can be immediately (after completely cooled down) used as a dipping for eclairs or doughnuts (donuts). Refrigerate for a couple of hours and it comes to a spreading consistency for your cakes and cupcakes.
