Thalipeeth or Chilla recipe is a savoury flatbread made with multigrain flours which makes a healthy and nutritious snack recipe. This recipe is highly popular in the western region of India, especially in Marathi cuisine. The most popular thalipeeth recipe is the besan thalipeeth recipe and is consumed on a regular basis. Thalipeeth can be made with a mixture of 2 or more flours like rice, besan, wheat, bajra, jowar etc.

In Indian homes, the variety of flours are always stored in advance and are used for making different types of thalipeeth, bhakri, etc. In Maharashtrian homes, the thalipeeth flour or the multigrain flours made with grains, millets, spices, lentils, etc is prepared in bulk and is also known as thalipeeth bhajni. This bhajni flour is readily available in supermarkets. 

Besan thalipeeth recipe is one such recipe that is prepared mainly with a combination of besan and rice flour along with spices and chopped green chillies and coriander leaves. I personally like to have it as a complete meal. So, I add a few chopped veggies to make it healthier. This is quite easy to prepare recipe.

Furthermore, I would like to share a few tips and suggestions for making this thalipeeth recipe. Firstly, you can prepare the bhajni flour in advance and use it later. Or, you can just mix the different flours to make an instant bhajni flour. To make it healthier, I sometimes add lentil (urad dal or ragi) flour as well. Secondly, to make it a gluten-free just skip the wheat flour and add more of rice flour.

Besan thalipeeth tastes best when served hot with fresh yoghurt/curd with pickle or thecha as a side dish. Alternatively, you can serve it with sprouts masala curry or even baingan ka chokha. It is one of the most prepared recipes during the winter season.

Materials

  • 1 cup Besan (Gram flour)
  • ½ cup Rice flour
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 2 Green chillies finely chopped
  • ¼ tsp Ajwain/ Carom seeds
  • ¼ tsp Haldi/ Turmeric powder
  • Pinch of Hing/ Asafoetida
  • ½ tsp Lal mirch/ Red chilli powder
  • ½ tsp Dhaniya/ Coriander powder
  • ½ tsp Garam masala optional
  • Salt per taste
  • 1 tsp Oil to add in the batter
  • Oil for roasting
  • ½ cup Water or as needed to make the batter

Instructions

  • Firstly, in a large mixing bowl add 1 cup of besan.
  • Then, add a half cup of rice flour.
  • Now, add all the dry spices - ¼ tsp of haldi, ¼ tsp of ajwain, a pinch of hing, salt as per taste, ½ tsp red chilli powder, ½ tsp coriander powder and ½ tsp garam masala.
  • Mix all the spices very well with the besan and rice flour.
  • Then add finely chopped onion, tomato and green chillies.
  • Mix all the ingredients nicely and add a tsp of oil into the mixing bowl.
  • Add ¼ cup of water and mix it gently.
  • After mixing well, check for the consistency of the batter. It should not be thick rather it should have flowing consistency. 
  • Add more water if required
  • Mix the batter nicely with a spatula or a whisk. And cover the leave the batter to rest for at least 10 minutes.
  • After some time, heat the tawa or griddle and with the help of brush or spoon grease the tawa with oil.
  • When the tawa is moderately hot, mix the batter thoroughly with the help of ladle and pour the batter on the hot tawa.
  • Pour two or two and a half ladleful of batter and give it a round shape as we do for making dosa.
  • Once you see the thalipeeth is getting cooked from one side and the border starts leaving the tawa, flip the thalipeeth with the help of a flat spatula.
  • Allow it to cook from both the sides till the charred spots are visible, it will take around 2 to 3 minutes on medium flame.
  • This is how it looks when cooked completely from both the sides.
  • Now, remove the thalipeeth from the tawa and similarly, make the thalipeeth's from the remaining batter.
  • Serve the hot thalipeeth with the fresh curd or pickle or any masala curry of your wish.

Important tips for making besan thalipeeth:

  1. If making for kids and senior elders, avoid green chillies and reduce the amount of dry masala.
  2. You can make thalipeeth by adding the variety of flours, but make sure to knead the dough as we do for making chapatis.
  3. When making multi-grain thalipeeth, you need to pat the dough ball on a butter paper or muslin cloth with your hands and make sure to make few holes in between as it helps in even cooking. Do not use rolling pin here.
  4. Finally, to make it more nutritious add grated carrots into the batter.
  5. Besan thalipeeth tastes delicious when served hot and spicy.
